There’s never really a bad time for a pie. That said, some pizza’s are a lot better than others. Where should you go for pizza in Las Vegas?
Tony Gemignani (pictured above) worked at his brother’s pizza place in the Bay Area and has won awards at the World Pizza Championships in Italy. He runs arguably the best pizza place in the country, Tony’s Pizza Napoletana (in San Francisco). Little Tony’s is a second Vegas outpost.
They key to the pies from Gemignani seem to be the ovens. He has several different types of at his joints to ensure the perfect pie regardless of what style you prefer. His margherita pizza won the World Cup in Naples. You can’t go wrong with any of the options.
James Beard Award-winning chef Shawn McClain created this delightful, low-key pizza joint at the Aria. You can choose from their eight signature pies or create your own. If you like spice in your life, try the Picante, featuring ghost chili salami, shishito, calabrian chili, and roasted sweet peppers. For something more elegant, go with the Truffle or the North Beach, with clams and smoked mozzarella.
Better known by its street name, “Secret Pizza,” The Pizzeria at the Cosmopolitan offers large, New York-style slices and is open until 5:00 AM. It’s hard to find, sitting on the third floor of a shopping center, but well worth getting turned around for. Be aware, there are no signs for the place, and it is not mentioned on the hotel’s website. And even if you do find it, it’s liable to be busy, no matter the hour.
The signature white pizza is terrific, but trust me, they all taste great.
Ok, this one’s not for a quick late-night hit. Scott Conant’s upscale joint at the Cosmopolitan has sophisticated pizza and a wine list to die for. Their signature pie features fontina cheese, truffle oil, a cooked egg, and truffle shavings. The name of the place is an ode to the highest level of Italian wine. If you are with somebody who prefers pasta, Conant’s offerings are hearty and imaginative.
